Three Refreshing Cocktail Recipes for a Hot Day

When you picture a warm summer day, what do you envision?  Perhaps you think of sunglasses, a barbecue, or a day at the beach.  For us, no hot summer’s day is complete without a refreshing, ice cold cocktail.  In this blog, we’ve listed three of our favorite refreshing cocktail recipes for a hot day.

1) Beer Colada

It’s time to give “having a cold one” a different meaning with the Beer Colada.  This cocktail, made from beer, rum, and pineapple, is a refreshing marriage of a beer and a pina colada.  Mix up your Beer Colada by trying out the recipe with a different beer from our Beer Cave each time!

Total Time Required: 5 Minutes

Makes 1 Serving (About 15 oz.)


  • 2 cups of ice
  • 1.5 oz. pineapple juice
  • 1.5 oz. coconut flavored rum
  • 12 oz. lager or light beer
  • Pineapple spear and pineapple slice for garnish


Fill a cocktail shaker with ice.  Add pineapple juice and rum and shake.  Strain into a 20 oz. beer mug or Pilsner glass.  Top off with beer and stir briefly.  Garnish with pineapple spear and slice.

2) Strawberry, Lemon, and Basil Mimosa

Nothing says summer quite like citrus and berries.  This refreshing and sophisticated mimosa incorporates both, and is the perfect cocktail to enjoy over a summer brunch with friends.  Cheers!

Total Time Required: 5 Minutes

Makes 4-6 Servings


  • ¾ packed fresh basil leaves
  • ½ cup fresh lemon juice
  • ½ cup agave or honey
  • 8 medium fresh or frozen strawberries, thawed and sliced
  • One 750 mL bottle of Prosecco, chilled
  • ½ cup soda water or sparkling water, chilled


Combine the basil, lemon juice, and agave in a pitcher.  Using a wooden spoon, lightly crush the basil.  Stir in the strawberries, Prosecco, and soda water.  Pour into chilled champagne glasses and serve.

3) Sparkling Pomegranate Punch

Throwing a party? If you love wine in your cocktails, or are a fan of sangrias, the Sparkling Pomegranate Punch is going to have your guests swarming around the punch bowl! This sweet and tart cocktail is very refreshing and unique. Just make sure to make enough for seconds (and thirds!)

Total Time Required: 15 Minutes

Makes 10 to 12 servings


  • 3 Tablespoons Sugar
  • 1 Cup Pomegranate Juice
  • 2 Bottles of Sparkling Wine
  • ¾ Cup Late Harvest White Wine
  • 2 Oranges
  • 1 Cup Diced Fresh Pineapple
  • ¼ Cup Pomegranate Seeds
  • Ice Cubes


In a punch bowl, dissolve the sugar in the pomegranate juice, stirring vigorously. Add all of the wine, then incorporate the orange slices, diced pineapple, and pomegranate seeds.  Serve the sparkling pomegranate punch over ice cubes.
